Saw this at HEB this morning. Could not resist. Wagyu London Broil.

Marinated for an hour, one with EVOO, granulated garlic, and HCC Black, and the other with Montreal Steak seasoning.

Gonna give em a smoke bath till 115, then reverse sear on the gasser with GrillGrates. Got salt crusted russet potatoes going in the Century 22.

Someday I’ll do Waygu, but for now the budget and # of ppl in the house won’t let me. Lol

Amazing what a new regulator & hose will do for an old gasser. I've never seen it this hot.
Good for you using your gasser again to sear...

Got a small Tri-tip and a rack of beef side ribs.
Rubs are going on shortly and the Tri Tip a bit later.
No Fireboard today, cooking somewhat blind. FB is back at the factory for some diagnostics. Reboots periodically and the screen goes blank once in a while. Turning it off has become problematic as well. Going to rely in my past cook settings to get the temperatures I need on the Traeger and the Thermapen for temps

Getting ready to wrap and braise the ribs soon. Adding the Tri Tip shortly.
Have to take off my snacks first. I am addicted to these now. Tried some Oyster crackers with it this time. We can't get them up here so I stock up when I am in the US.
