What's cooking today? 🔥 Pics are necessary!

Make sure your security guards are well compensated for their efforts, A nice chunk of brisket for each will do.
Brisket is wrapped and finishing off in the oven. Beans and potatoes are on the smoker. Security is keeping busy with some bones from the butcher while waiting for bonus pay of some brisket.

Following up on my post 1828 of Wednesday, here are pix of the pork belly and its magical transition to bacon. Was able to fit it on my Chef’sChoice slicer, so we have nice, even slices. First test (fried) was a bit sweeter than I had hoped for, but quite acceptable. Hint of maple, nice chew. Not outstanding, but my best yet (which isn’t really saying much.)

Looks amazing
The flavor will change a bit in the next couple days, maybe it will mellow on the sweetness
 
The annual Christmas standing rib roast. 5 bone this year for 14, from Publix instead of independent butcher this year. Salted 2 days before, washed off the salt and applied Traeger Rub one day before. 30 minutes at 500 F, 4 hours at 300 F, 20 minutes in foil on counter. Came out great!

Horseshoe gammon simmered in cola with onions, celery and carrots plus cinnamon and black peppercorns for a couple of hours, smoked over beech chippings then in the Traeger for a Mike's Hot Honey lightly sprinkled with Meathead Pork rub glaze. An experiment which surpassed all expectations, the Mike's Hot Honey was a Christmas present I will be using again! ;)
