What's cooking today? 🔥 Pics are necessary!

Did some mid-week 0-400° wings in the Traeger. Turned out great. I left them in the fridge for a couple of hours uncovered to get good and dry. Then dusted with Holy Voodoo and let the Traeger do it's magic. All-in cook time was probably about 90 minutes.

Smoking’ Sunday! Multiple cooks. First some country style ribs from sliced pork butt. Second cook full chicken.

Yeah, I normally spatchcock whole birds but I wanted to see how the uncut one turned out.
 
Tried my first Spatchcock with Alabama White BBQ sauce and regular BBQ sauce.

Alabama White BBQ sauce is an ideal accompaniment to chicken. I use it when cooking boneless, skinless chicken breasts. It is the only way I can keep the meat juicy and get decent browning on the outside. With skin on, the process is much easier.
 
Boneless lamb leg stuffed with garlic, dried apricots and pistachios. 375 to IT of 140 (wife likes it more done). I’d do this again in a heartbeat. Probe is a combustion by the way. Very happy with it.

I cannot get my wife to eat lamb, although I would like it. When she was a girl, her grandmother liked to eat mutton. Her mother would cook the mutton at home and then they would take it to her grandmother. Unlike lamb mutton has a strong gamey flavor and aroma which would permeate the car. My wife associates lamb with the mutton aroma of her youth and refuses to try it. :rolleyes:

I ordered a Combustion probe because of the rave reviews I saw on various bbq forums. After the 3rd shipping delay I just cancelled the order.

Give it a go. I haven’t heard about shipping delays, but it might be due to growing pains. Their customer service is pretty good. I also have a meater which drops the connection at whim. I much prefer the combustion. Its predictive ability is great, and the phone app produces a great graph. It’s not tied to the phone and has its own receiver which is a plus for me.
