Found a slab of ribs in the freezer from earlier this Summer, so why not?!?!

3:00 PM Then bump to 200° for an hour
4:00 PM Then bump to 225° for an hour
5:30 PM Wrap w/brown sugar and butter, bump to 250°
6:30 PM IT over 200, Unwrapped, glazed with Meat Mitch, and cooked for 30 min.

We’ve started making Sabatasso’s frozen single pizzas on the Traeger, and last night they were a big hit. Everyone added their favorite toppings, and after 15 minutes at 400°F with a slight smoky flavor, we had some very happy kids!

Pork loin on the Traeger. Mashed potato cakes as the side. You can see them on the flat top thread.

9 pounds of brisket going on before I go to bed tonight. Yellow mustard binder, salt and pepper. Going to set the Bronson at 225’ and I’ll do the “quick and dirty hopper extension “ so I don’t have to get up in the middle of the night to add pellets. Photos to follow.

What is the "quick and dirty hopper extension"?

Did up 17 lbs of Turducken sausage. Some for our Canadian Thanksgiving dinner in a couple of weeks. This was done as a fresh Sausage. I wasn't a big fan of the ones I smoked last year
