Do you season your Brisket 24 hours before smoking it or right before it goes on the grill?

I’ve done both and can’t really tell a difference. I’m very basic with brisket tho. I only use salt, pepper, and some Montreal seasoning on it. The advantage of doing it the night before is brisket takes so long to smoke if done prior, I can wake up, set the smoker, and put the meat on.

I like to do it the night before and let it sit just personal preference. I don’t think it adds anything to it versus doing it right before. It’s a mental thing lol a lot of competition guys I watch season their stuff right before it hits the grill.

I do a dry salt brine the 24 hrs before I put the rub on. It gives time for the salt to penetrate the meat.

I do a room temp brisket about 3 hours before the smoke. If you do salt too early you'll notice the texture changes into like a ham consistency.
