Old Traeger user with a new 780 Pro

My name is Kirk Messinger. I've been a Traeger user for about 10 years, starting with a Li'l Tex. In the first year, I gained 30 pounds, and came to enjoy grilling for the first time.
We bought a new 780 Pro for Christmas. I've seasoned it, and my first cook will be today, spatchcocked with the lemon-spice rub from Amazing Ribs.
I have a Fireboard wifi-connected thermometer with 6 probes, which allows me to save the details of all my sessions.
I am noted for being opinionated and verbal, so expect me to be a regular contributor.

Welcome aboard. I'm new to Traeger myself but have a long history with BGE and stick burners. I'm learning pellet grills are a different breed but enjoying the set it and go freedom (although I do miss the sear a bit). ?.
