Been cooking on "charcoal grills" of every imaginable kind, as well as several sidebox smokers, for about 50 years. Got tired of slaving over them in 110 degree heat, etc. so my wife just bought me a new Traeger 34. Got it seasoned, cooking my first baby back tomorrow! I live about 30 miles NW of San Antonio, TX.

Welcome. I have some simple advice. Buy a couple of smoke tubes off of Amazon and some wood chips. The flavor you get will be much closer to your experience with charcoal. Also, don’t buy 15 thermometers and place them all around your grill and be upset when they don’t read the same thing. This is more art than science. Relax, have a dram of your favorite single malt, and enjoy.
