Help! No Grease?!?

First cook on my Ironwood 885 today, burgers, dogs and finished some bacon. Smoke then sear. This was all the grease in my bucket at end of cook, seemed to have gone elsewhere because I had several flare ups towards end of cook. Never had this issue on my Pro22. Any ideas what may be going on?

Sometimes i dont get anything in the catch bucket depending on what I'm cooking, it just burns to the drip tray liner. Imo i dont think you cook enough food that had alot of fat in it to produce alot of run off, unlike a pork butt or brisket. Then you seared and cooked it to the drip tray or liner if you are using one.
 
Wouldn't most of the grease burn off after you increased the pit temp for the sear, as evidenced by the flare-ups? As a side note, depending on the fat content and amount of food you're cooking, there may be times when you will need to remove the grease before transitioning from a smoke to sear. Otherwise, a grease fire is more likely.
