New Pro 780 need some tips

I just bought the Pro 780 and I've cooked some things on it already. However the recipes on the Traeger forum are mostly meals bigger than for the two of us. Would like some tips on cooking for two. Should I just cook to temperature and is there a good temperature for smaller portions? We do a lot of chicken breasts or thighs, pork chops, steaks. I've calibrated the probe and have been using that with the app. Also just purchased a Thermapen MK4 as a quick check. Had a Weber gas grill before and just trying to learn the ropes with this grill.

I cook a lot of small meals for my wife and I, cooked primarily by temp. For Chicken parts I have a routine based on time (30min), but the final check is with the MK4.

I am also cooking for 2, but my wife loves leftovers, however I cook to IT, and besides the IT is is all about the rest time......
