I am now on my third meat probe for my 3 month old Ironwood 650. They have all been about 30 degrees below actual temp when checked with my Thermapen. If I’m not checking temps regularly it’s easy to overcook. Anyone having this problem!
 
If what you mean by calibrating, I stuck it in ice water and it read 18 degrees F. In boiling water it read about 180F. When I use it cooking it is always 20 -30 degrees low.
 
I mean following the users manual instructions on calibrating the meat probe. If you did and it's still off, that's pretty messed up. Out of the box, my meat probe was off, but after calibrating, it's within 5º. The ambient sensor on the other hand is a train wreck.
