For my 3rd cook I’m trying Matt Pittman’s Pork Belly Burnt Ends. Just put them in at 250 after cutting into roughly 1 inch cubes and liberally dusting with Honey Hog BBQ rub.

I’ll update after the next steps.

Nice. Don't forget to spritz with apple juice every 45 minutes. I do his recipe all the time, but skip the saucing.

Leave a few aside and try them with just the dry rub and compare.

Well crap, I don't have anything to spritz with. I'm guessing that might increase my chances to get dried out ends?

Sigh, another lesson learned and thing to buy. :)

If you have an extra tray around somewhere, throw it in the grill with some water in it. It'll help with the moisture since you don't have anything to spritz them with this time.

You can spritz with water. It’s free.
