Beef Market Trim Split Brisket?

Has anyone done a Split Brisket before? I picked up a small one at HEB today to test a different cooking method. It looks like there is a nice 1/4" fat cap on the bottom, so it's ready to go after some rub. I'm planning this for Tuesday morning.

This is my first time using the Traeger Coffee Rub. I'm also experimenting by placing a small bowl of water inside the grill and I plan on spritzing the meat with water every hour until it's wrapped with butcher paper.

1. 3lb Split Brisket.
2. Treager Coffee Rub
3. Using Traeger Texas Beef Blend Wood Pellets
