I am trying to smoke salmon and I have the temperature set to 180F. The grill is consistently at 204F. Why will the temp not drop? I have not been opening the lid. Is this a common issue. How do you work around it?

When I cooked a Pork Shoulder a couple weeks back with the intent of 170 for 2 Hours before going 230 for the remainder (17.5 Hours total), I did notice that it took 45 minutes or so before the PRO 780 would reach equilibrium and stay +/- a few degrees of 170 (during the 45m, it would bounce around between 180-205) ... it finds equilibrium a LOT faster when cooking at 225-350 in my experience ...
 
I don't want to be viewed as a smart aleck but in my feeble mind the workaround would be to expect your food to finish a tad sooner. Maybe you're a pro chef but can that 180 vs 204 truly be that impacting? If your Pro is in the sun in FL that could be part of the reason your temp has climbed a tad.
