A lot of posts here about issues with their Traeger and I certainly had some when I got my 650 in the fall with firmware that refused to update etc. That's all in the past and the smoker is rock solid. I just wanted to say how happy I am with my Ironwood, I just smoked an 11 lb. brisket for 12 hours and it came out perfect. The temp outside was 40 degrees when I started it and within 20-30 minutes I had 225 and super smoke within 5 degrees. The temp remained rock solid, usually within 1-2 degrees all night and when I moved it up to 250 after 6 hours and later 275 for the last 2 hours the grill responded effortlessly and within 10 minutes was at the new temperature within 1-2 degrees. I opened the lid many times to spray the brisket and to foil and every time the temperature returned to the set value within minutes, hardly any overshoot. The probe + iOS 2.0 app (the new one) worked great and alerted for me at all the temps I set for the brisket itself. When I was done the shutdown sequence took 15 minutes, cleanup was pretty easy although using the Ironwood 650 disposable trays still gets some mess on the underlying metal tray so I really should just save money and foil the whole the tray and be done with it, no more fancy trays that aren't quite as good anyway.
Bottom line is the Traeger just plain worked, perfect, with no futzing for 12 hours and produced a great brisket. I've done 6+ months of cooks now and I'm just pleased with the product and feel like I made a good choice even with other shiny competitors from Weber and others out there.
