My old BBQ075 is ready for some upgrades!! I'm thinking about a new controller (thinking about Savannah Stoker) but I'm not convinced PID is what I want. Will it produce plenty of smoke? My diffuser and drip pan are warped pretty bad. Is it worth it to replace these (thinking about Smoke Daddy stainless steel) they say they won't warp. I would love to be able to sear a steak nicely, it has never done that well. Will a new controller burn hotter for a sear? I know that's a lot, but I need some help!!

You probably won't ever get a proper sear, regardless of what controller you go with.
Removing the drip tray and baffle to expose the open firepot may help get a better sear. Cook on the grates right over the open firepot. A few pellet grills use some feature to expose the firepot to assist with searing
As for the controller, guess it depends on how much money you are looking to invest in your upgrades. Have a look at @Timmy and his FireBoard upgrade
For the drip trays, check with @Shawnbbqman

Smoke daddy does not have stainless drip trays or heat shields. They are steel. Which means you will get the same inconsistent heat of your stock pans.
I make stainless steel drip trays and heat shields. Also firepots for most traeger grills. Advantages are
No more rusting
No more warping
And because of the material your heat is more consistent.
No more hotspots

Send me a message and I can get you a quote.
