Howdy All!
I'm a new Traeger owner and new to smoking. I purchased a 10lb brisket from Costco yesterday, and after I trimmed the fat cap down, I flipped it to the other side, and starting taking some of the fat off the top. It turns out there was a huge amount of fat on the top, and I ended up "notching" about an inch out before I could get to the meat. For future reference, s
hould I have just left the fat in, should I just cut the entire end off where the notch starts (see picture), or did I do the right thing?
