Fat on both sides?

Howdy All!
I'm a new Traeger owner and new to smoking. I purchased a 10lb brisket from Costco yesterday, and after I trimmed the fat cap down, I flipped it to the other side, and starting taking some of the fat off the top. It turns out there was a huge amount of fat on the top, and I ended up "notching" about an inch out before I could get to the meat. For future reference, s

IMG_0444.PNGhould I have just left the fat in, should I just cut the entire end off where the notch starts (see picture), or did I do the right thing?

Not sure if you have seen any videos on trimming one, but sometimes seeing is easier than describing
Keep in mind, there are other methods, so you may want to search for trimming a brisket
