Brisket, with a pause

Hey! First post. Hope you're all healthy a d doin well.

Started a 15ish pound brisket at home in the evening...smoked 11 hrs. Took off, wrapped in foil, then transported the traeger to work back on smoke. Put it back on the IT was 120. IT was 140 when i first pulled it. Total off traeger time was about 2 hrs. Question is, Whats the worst case scenario, any altering for cook time or temp? Was plannin on approx 16hrs of cook or IT 195-200 Cookin for the crew...dont want to disappoint.
