A rack of ribs falls somewhere between 18-23" in length and about 6" wide. Thus, you are going to have to do some cutting on the ribs to fit two full racks of ribs on the portable grill. Trim off the last few ribs from each rack of ribs to all them to fit on the bottom grate and then cook the trimmings on the top.

One of the reasons that people upgrade to larger grills is to cook multiple racks of ribs.
