I have a new 575 Pro. the rib recipe calls for a temp of 170. The grill heats way past and stays around 200-208. Looking for some help.

I have a PRO 780 ... I cooked a Pork Shoulder a couple days ago and started at 170 degrees for the first 2 hours - I did notice that there was more temperature fluctuation at that setting than when I am cooking at 225 degrees and higher ... after a period of time (maybe 45m?), it did finally settle down and stayed within a few degrees +/- of 170 ...

Thanks for that. This stayed tight in the low 200 zone foe 2 1/2 hrs. I pulled the ribs they for the second phase at 225. And has no problem holding that temp. Just won’t founder 200 degrees.

Were you doing the 3-2-1 rib recipe? I've done ribs a few times on my 575 and find that they come out much better with a little higher temp anyway. I didn't have good luck starting them at the 170-180 range. Now I use a higher temp all the way through and they are falling off the bone tender.
