I have family coming over tonight for dinner so I decided to cook 3 briskets, each a little bit different. They are all 3-4 pound split-cut briskets. I'm doing one with 50/50 salt & pepper wrapped with butcher paper, one Traeger coffee rub wrapped with butcher paper, and the last has the coffee rub and will be wrapped in foil. First two briskets went on at 6:30 this morning, the last one went on when I wrapped the others (about 10:00).
