Where do you position your meat?

So to the left where the exhaust is it gets considerably hotter than to the right of the cooking chamber.

I have been placing mine slightly to the left of the centre with larger ends of the meat closest to the stack.

Interested to know where you guys position your meats for optimum results?

I do the same thing. That side is always hotter.

Now, anywhere in the chamber, as it stays +- 5 degrees even throughout the chamber. You can do this also makeshift by putting an aluminum foil tent over the entire cooking area.
