Troubleshooting long cook times

I’ve got two Meater’s and they’re definitely different, even putting them into the same hole (swapping) they read differently. I use mine as an indicator then use my Thermpro to determine. I do like the wireless option and looking for something that is more reliable than the Meater but what I’m doing works well.
 
The Meaters (and any other similar dual temperature probe) are designed for accuracy on the internal meat temperature. The chamber temperature is being measured within 1/4- 1/2" away from the meat. There is no way it can be accurate as the cooler meat is affecting the temperature. For accuracy, the chamber temp needs to be measured at least 1/2" away from the meat. Dual probes cannot do that, but they are convenient.
