First time doing tri tip roast in the T grill. Any recommendations on grill temp and when to pull at what internal temp of roast? Do I need to wrap in butcher paper to finish? I’ve Already seasoned the meats. Doing two 3lb roast. Shredding one and cut the other. What’s the internal temp at finish? 135-145 deg. Thank you.

GM, that's what I think of when I think of Tri Tip.....
 
I dry rub and go on super smoke at 180-200, until the meat gets to 130. Take it off and wrap, (I use foil but paper’s good) while the grill heats to 500, unwrap and do 5 mins on each side. (4-6 depending on how done you like)
Wrap back up for 10-15 then slice across the grain.
Very consistent.

slow smoked at around 190F with mesquite pellets unit 120 F internal. I cut it in half along the seam and reverse seared it on my gasser.
