Tip for removing your brisket or pork butt in one piece

One of the hardest things about smoking a brisket or pork butt till its so tender, it will fall apart when you try to pick it up of the grill. Some stuff will stick to the grill and you end up with chunks.

I now use a short handled metal pizza peel to assist with removing the brisket and pork butts. It really has made the task a lot easier, plus I now have one for pizzas.

I’m really starting to not like this site any longer. Every time I launch it I hear a sucking sound coming from my bank account. :)

I get away this time as I already bought one Metal with Folding handle so it is easier to Store....
But I use the heat resistant gloves for Briskets and almost everything else, I use the big spatula for Pizza...

I'm wrapping my pork shoulders and briskets when they're coming out of the stall. Foil for the pork and butcher paper for the briskets. I can still tell by feel when they're getting done and can still poke a thermometer through the wrap to check them. No worries taking them off.
