Either one will work great. Both are from Thermoworks. Compare the two on their website and pick one.

New version is Thermapen One for this Deal price of 86 USD (Thanks MidwestSmoker for the heads up on this deal price).
The Old version MK4 is still showing on the website at a close out price of 69 USD. I have the old version MK4. For 17 dollars more I would purchase the new version with less then one second temperature acquisition time. With that acquisition time you could slowly insert into the meat and watch the temperature gradient realtime.

From what I have seen you can buy a cheaper temperature probe but not a better one. I have learned from experience to pick a better product and not fuss with junk. My wife must agree as "my MK4" is always in her kitchen as her cheap temperature probe(s) set unused in the utensil drawer. I just have to remember to get my MK4 from the kitchen when I start smoking. She never seems to return it to my box with smoking equipment. Possibly I should get the new version and let her keep the MK4 .
