Last question. For a brisket do I cook at 225 or 275 ? And what time would you normally start your cook
 
I think the easiest way to cook brisket is over night. Low and slow, have it ready by next afternoon. Watch Matt Pittmans “weekday brisket” video.
 
I don’t know how much you know about brisket, but you want a whole packer, not just a flat or point. I like to choose one around 15 pounds. That will give you 12-13 lbs after you trim it.
 
I like to start around 5pm, and have it ready to wrap by mid morning, and finished, and ready to rest, by early afternoon.
 
I bought a whole packer and will be my first smoke . My traeger is a TFS81PZD so it’s an older model without all the new cool features . I want to set it and come back in the morning to wrap and finish

A $70.00 packer may not be the best thing to do for your first smoke. They are easy to ruin, if you don’t have the right tools or know exactly what you are doing.
