The recipe says to put the grill on its smoke setting, but there is no smoke setting, just a temperature setting. My old traiger without the fancy digital setting just had a knob tht said smoke, the "pro" 780 does not, HELP!!!!

For the PRO 575/780, you get the smoke / super smoke "effect" by low-and-slow cooking (170-185 degrees for an hour or two) ... and then increasing the temp to the recipe instructions to finish cooking the protein ... Probe IT temp will be the determining factor when the protein is "ready" ...

My brand new Pro 780 seems to smoke best at Traeger setting 165.

I have Olivivi temp probes for more accurate temp settings. At 165, my 780 ambient temp with no wind, 71 degree outside, fluctuates between 167 and 185. See graph. Watching it, no smoke comes out above 180.

I also check the hopper, sometimes the pellets appears to slow feed.
