Looking currently Chargriller
Hi newbi here. I have a Chargriller 30"x19", basically 570*". I don't use top shelf because I expect it is hotter. So, for an Ironwood 575 with basically same area total, could I cook on top also and same temp? I see a post about left and right variation, I am also concerned about top/bottom. If an issue, I would need to go up to a 780. More $ $ $ for first Traeger. Oh, BTW, this is a side firebox, and I have a water pan in front of box to dissipate heat more even.
Wife been pushing me for this, and I'd like to spend less time watching temp sometime.

I have an Ironwood 885 and have done several overnight cooks for brisket and pulled pork so far. No issues watching temp.
On your overnight brisket cook, what temperature do you use and what time do you start it for it to be ready the next morning?
