How long can a pork butt rest before shredding it? Basically I need to travel about an hour and a half Sunday and it be ok.
I know I can wrap and throw in the yeti and be more than fine but will it lose its bark??
 
Use butcher paper instead of foil to wrap it and you won't lose the bark. 2 hours max.
 
I think an hour and a half is almost the minimum rest time! I usually rest it longer. You should be fine.
 
I've kept mine in a cooler wrapped in butcher paper/towel for 2+ hours several times, but I agree that an hour rest is always a good idea before shredding when possible anyway. Enjoy your pork!
 
I have never used paper for wrapping, I've had the most awesome bark I can ever hope for.
In the almost 20 years I've been doing PP, I've always wrapped in foil, towel and in a cooler packed tight... It can and does last up to 4 hours with ZERO negative affect to the meat.

I have cooked for picnics that didn't even have all the BUTTS coming off in that 3 hour period, so I would pull a butt out of wrap to shred and serve while the others stayed... they all turned out great. You don't want your bark too hard that it won't mix with the meat a little, it adds flavor to the rest of the "unsmoked" meat in the center of the butt.
