Pork Pork Belly Burnt Ends

I was all set to do pork belly tomorrow for the first time at 275 on a cooking rack and then this video dropped yesterday. Thoughts on cooking them in a pan?

What pellets are you using for the cook? I would think hickory, maple, and apple would all be good choices.

Really no difference that I noticed. Only difference is that I had to wash the pan!
Lol that’s kinda what I was thinking may be the case Lol
 
When you have things that tend to get messy as burnt end might do, I like to use a pan with a rack to keep the meat off the bottom of the pan. The pan will catch dripping that might otherwise get down in the grill. The rack will keep the meat above the drippings so that smoke and heat can get to all sides of the meat. Washing a pan after the cook is a lot easier than getting grease out of the grill.
