PIG CANDY WITH APPLE SLAW
HARDWOOD: Cherry, Apple or Pecan
COOK TIME: 5 Hours
EQUIPMENT:
* Aluminum Pan(s)
* Meat Rack(s)
* XXL Zip Lock Bag
* Mixing Bowl
INGREDIENTS:
Pig Candy:
* 8 to 10lb - Pork Belly (Rind/Skin removed)
* Your favorite Pork Rub
* Honey Rub or Brown Sugar
* Your favorite BBQ Sauce
Apple Slaw:
* 2 - Whole Granny Smith Apples (Unpeeled and sliced thin)
* ½ - Red Onion (Peeled and sliced thin)
* ½ - Tablespoon of Apple Cider Vinegar
* 1 – Stick of Butter
* ½ - Cup of Brown Mustard
* 1 – Teaspoon of Traeger Veggie Rub
PREPARATION:
Prepare the Apple Slaw:
* Thinly slice the Granny Smith Apples
* Thinly slice the Red Onion
* Melt the butter
* Place the Apple, onion, Apple Cider Vinegar, Brown Mustard, melted butter into a bowl and toss until ingredients are thoroughly mixed.
* Refrigerate.
PREPARE THE PORK BELLY:
* Slice Pork Belly into 1-1/2” strips
* Slice 1-1/2” strips into 1-1/2” cubes
* Place Cubed Pork Belly into a large aluminum pan
* Give Pork Belly Cubes a light coat of yellow mustard.
* Place the Pork Belly cubes into an XXL zip lock bag
* Liberally coat the Pork Belly cubes with your favorite Pork Rub and Brown Sugar
* Shake the zip lock bag until all pork belly is thoroughly covered.
* Place Pork Belly Cubes on the meat rack fat side Up. Leave gaps between the meat and lightly re-season with both the Pork and Brown Sugar.
YOUR COOK:
1. Set Grill for 200 (Super Smoke if you have it)
2. Place Meat Racks with Pork Belly Cubes on the grill
3. Set meat probe for 195. Usually 3 to 4 Hours depending on outside temperature
4. Once meat reaches 195 (Check after 3-hours), remove the Pork/meat racks from the grill.
5. Place the Pork Belly Cubes in a large aluminum pan.
6. Sauce liberally with your favorite BBQ Sauce.
7. Apply Meat Cubes with a light coat of Honey.
8. Mix thoroughly and re-season with your pork and honey rub.
9. Place the Pan and Pork Belly Cubes back into the cooker for 45 minutes. Check for Tenderness.
10. Let sit for 15 minutes.
11. Serve with Apple Slaw and enjoy. Make plenty - they go fast!
