Hi. Bought a Pro 34 today. I am an avid outdoor cooker that also uses a Weber 310 that is plumbed to my natural gas. Looking forward to learning all about the Traeger way. I have smoked on charcoal, moved to a vertical electric, back to charcoal (Oklahoma Joe Highlander) which I sold yesterday. I probably share the frustration of hitting and maintaining a temperature while, at the same time, getting good wood/charcoal flavor. Looking for a balance between flavor, texture and tenderness combined with a set it and forget it simplicity. Asking too much LOL?
