Traeger 575 Pellet Smoker
Hi,
Just bought a 575 and am brand new to pellet smokers…Lots to learn, so I hope I am in the right place.
Based in UK, purchased from BEDBBQ.
 
Main thing I would tell you is don't trust the built in probes and pit temp. Get good third party devices.
Otherwise start cooking. You learn something new every time you cook. I'd start with pork butt. You have to try to mess one of those up.

I would suggest you start off with a large roast. A large piece of meat is much more forgiving when cooking in the Traeger than smaller cuts.

Get a decent instant read digital thermometer to check the internal temperature of your cooks. By "instant" I mean one that will give you an accurate reading in less than 3 seconds. Some devices can take up to 10 seconds to stabilize. You want one that will read accurately to +/- 1 F.

Never cook based on time and temperature as you might if cooking in your kitchen oven. There are too many variables that come into play. A cook is complete only when it has reached the proper level of doneness as measured by the internal temperature.

Do not forget to rest your protein after cooking to allow juices to redistribute. The larger the cut, the longer the rest time is needed. A 1 pound steak might only require 5-10 minutes rest while a 10# roast might need an hour or more and a 20# brisket might benefit from several hours of rest. When resting, wrap in foil and then in a towel. Some even use a picnic cooler to insulate the protein during the rest period. Be sure to allow for the rest period when determining when to start your cook.
