Oh man, that was entertaining! I just got my tallow (rather than make my own) and will try this at least once. My feeling is that the brisket doesn't really need this as it has plenty of fat. This makes more sense for learner cuts.

I agree, maybe when doing “poor mans burnt ends” or something similar I would add the tallow
