One thing worth checking is the RTD temperature probe inside the cook chamber — if it's coated in grease or soot it reads low, so the controller keeps feeding pellets without ever hitting set temp. Clean it gently with a non-abrasive pad and make sure the chimney cap has its proper gap and the firepot burn holes are clear, since restricted airflow is the most common cause of a temperature ceiling on a used 575.
