Good evening!
Long time lurker, first time poster. I am a total noob for using a smoker, only a weekend warrior for grilling (Genesis S-330). Grew up in a charcoal-only family, the hibachi and the 1970s Kamado we got at the Pachinko Palace. Figured it’s time to take on a Traeger, eyeing them for months. I waited for the Costco Road Show (I love Costco but was not impressed with the used car saleman’y style of the Traeger guy). I planned to wait for Black Friday then I saw the price increase in October. The night the prices came back down I got mine from my local Ace Hardware. I earned enough points to get some extras as they didn’t offer the Black Friday Traeger accessory package.
Got my Ironwood 885, the Traeger folding shelf, pellets and sauces. Also got a Fireboard 2, Thermoworks spools and rings, some magnetic wire keepers, and an extension cord reel to keep things clean. Did a full ‘modified version of seasoning’ last week and just did my first cook – the basic 3-2-1 method, pork St. Louis style ribs. I know there are other ways, but for my first time I wanted something basic and simple.
I am looking forward to learning more from everyone. (See, I was a lurker… read it all here, got the Fireboard 2 before trying to cook something, and did a proper modified seasoning!)
