Hi all, I’m new to cooking on a Traeger but have prepared Jamaican jerk pork on a barbecue for years. I love the jerk marinade and think it would be wonderful to slow smoke the ham shoulder. Does anyone have a good recipe for the cooking part? I am also curious to know if anyone ever puts dried allspice berries in with their wood pellets to get the scent of allspice wood, when making jerk chicken or pork? My brother says noo!! It will mess up my chamber. I don’t want to do that. Thank you for any help. My Christmas Eve dinner is going to be Jamaican jerk pork, mango salsa, sweet potato fries, and grilled pineapple. Maybe a Mojito or two.
