I am wanting to know if it really matters if you have the bottom grate low or in the raised position for smoking, I am thinking that in the low position I would be able to smoke more food like 2 full Briskets on the bottom and 2 pork butts or a few racks of baby backs on the top shelf.

At smoking temps, it should not make that much of a difference IMHO. It just gets it higher up off the drip pan and supposedly into more smoke circulation.

The bottom is much hotter than the probe temp too especially on the left. You're looking at up to a 30 degree diff between the probe on the top right and the temp on the bottom left. So be careful...

Take a piece of bread and check the temps that way. See how cooked it gets on the lower rack for 20 min compared to the high grill grate position for 20 min.
