First time doing plate short ribs

Hi guys,

I’ve had a traeger for about 3 years now and just recently upgraded to the pro 780. I have done briskets, ribs, burnt ends, butts you name it but never have done short ribs whole. Today that changed as I did a whole plate of prime short ribs. They were on the smoker for a total of 12 hours. They spent the first 5 hours unwrapped smoking then I wrapped them in butcher paper and let them get to 205. Here’s the finished product.

For these I rubbed them in mustard and Montreal steak seasoning and hit it with “gold dust” I got from a rib cookoff.
