Just got a fantastic Ranger, it's amazing. However, it cooks at 50° hotter than the set temperature all the time. Any suggestions on where to go with this?

Cook at 240 then. BBQ is a dance between time and temp. If the temp is a bit more than another, it will simply cook a little faster. It’s just a variable in a process full of other variables. Don’t let it consume you or discourage you in any way. It’s no big deal, I promise. Have you verified the actual grid temp with an independent probe? If you want you can also contact customer service. Good luck.

So then, how do I smoke salmon at 165?
