First brisket on Pro 22

Second pork butt was like this,
on at midnight, smoke mode, put pan of water on grease pan to keep moist
about 8;30 am checked it temp around 140 looked good raised temp to 250
2-3 hours later hit 165-170, put in pan with little apple juice foil over pan tight
2-3 hours later hit 205, put in cooler with top exposed a little. 2 hours later opened cooler
it was awesome…….not quite where I wanted the bark but close
QUESTION
want to do brisket same way…….any comments

one question I do have. Smoke mode worked well for me but would I get same results just putting it on at 7am at 250, is all night smoking really needed ?.

Depends on how big it is but no, remember you’re cooking to temp and not time so you have to figure it out. I would think cooking late at night would be safe. Then you’ll know an estimate time frame for the next cook. But I’m not a brisket fan and hardly cook them, I know if you put brisket in the search feature you can read plenty of good advice on it.
