I have both probes.I did ask but they don’t even stock them. I will have to unfortunately upgrade in the future if I need to. I will check out the difference but hopefully the basic probes will do the job!
Based on my limited experience, I think the provided probes will work best for bigger cuts of meat such as a roast although they will awkwardly work for smaller cuts of meat.
Due to their length, ideally, you want to insert the probe maybe 3 inches into the meat so that it stays in place.
The competition probes are smaller both in length and width.
They will best go into a whole chicken, chicken parts and maybe 1 to 4 in. thick steaks.
IMO, You will be fine with the provided probes but it is nice to have both types.
