I have a bucket full of fat that dripped out from smoking my pork shoulder. What do you guys do with this?

Toss it. If I want to retain some of the drippings from something, I place a pan under it in the smoker, or put the meat in the pan - depends on the specific meat.

I use an Olive jar from Costco to catch my drippings. Good thing I like olives. Anyway, when it get close to being full, I swap it out with another empty olive jar and put the lid on the full one. It goes in the garage fridge till trash day. By then, all the drippings are solid and good for the trash.

Makes a good weed killer as well .... just don’t pour it where your dog can find it.
