Costco

Costco only tenderizes steaks (even Prime . Although I don't purchase my steaks from Costco as I do not need that many, I would not have a concern about the safety of the teenderized steaks. The FDA as a standard for cleaning the tenderizing machines and Costco has committed to cleaning more frequently than that standard. They certainly do not want their member to be subjected to food poisoning; that would not be good for business.
You are not correct in the statement that Costco "only tenderized steaks". They definitely tenderized roasts as well. Regardless of grade. Check again next time you are there. Or do a quick search online, you'll find more than one or two pictures of cut roasts that are blade tenderized from Costco.
The warning on the package is on there out of a requirement from the FDA. With that said, these are recommendations from them to ensure food safety. It's always up to the individual purchasing and cooking the meat to do what they want with it. The bacteria isn't usually from the machine doing the tenderizing. It is present on the surface of a lot of the meat we purchase and there from the slaughtering process. It is normally killed through the cooking of the meat because it's on the outside and subject to direct higher heat for a longer period enough to kill any harmful bacteria. With blade or mechanically tenderized meat, that bacteria can be pushed into the center of the meat when the blades are pushed in through the process of tenderizing.
A lot of the listeria we are seeing now is from unsanitary processing equipment.
We can pasturize meats by holding at a x temperature for x amount of time. It doesn't always have to be a high heat. It is all about food safety, we all do what we feel safe doing. But to believe Costco only tenderized steaks is wrong.
 
Thanks @RustyJake for the correction to my post. I have never purchased a roast from Costco and did not realize they were blade tenderized. I rarely purchase steaks there.

My wife just signed us up for a Costco membership.

It seems many of the posters on this forum buy meat from Costco.

What is the consensus about Costco meat? Beef vs Prok vs Chicken/Turkey vs Fish?

I have a pretty good local butcher and fish market, but I'm open to suggestions about buying at Costco, either regularly or via special deals.
There are 2 types of costcos! One that most people go to with the toys and all the samples . then there is Costco #2 called the business Costco that caters mainly to Restaurants and Motels . In South King County in Washington and Pierce County we have a few regular Costcos and 1 Business Costco located in Fife Wa. they only carry bags of beef and no small portion cuts. ect. a bag of Tri Tip has about 20 to 25 tips in it for about $120.00 . = about $5.00 a pound versus $9.95 a Lb at the regular Costcos for a package of 2 Tri Tips for $9.95 a pound, From what I"ve seen there is no Tenderizer marks in the bag of beef. the meat area is bigger than a normal grocery store, its an adult toy store for us main stream knifers.
