Temperature for the ambient probe is very stable. Once it reaches the set point, it might vary a degree or two. Today I used my ThermoWorks and MK4 Thermapen to check the 620's probes. They agreed but for a 1 degree difference on the ambient probe. Very impressed with this unit from set up to wifi connection. It makes me a happy camper..........
