I have a Traeger 575, been smoking from 8:00 PM last night until now, 9:15 AM, (13 hours). Temp is set to 280 degrees, but I can't get past 168 degrees on the probe. I also did a probe calibration. It's been there for almost 5 hours now, no movement. NO, I am not opening the lid too much, just to re-set temp probe.

The meat has stalled, bump up the set temp on tbe grill mmmmm maybe 320*f. Also grill temp from the traeger and actual grill temp may not be the same. My 780 pro is like that. If you can check with a different thermometer. I have the thermopro tp20s i got it for my wood/charcoal smoker.
