Brisket trimmings for stew

I have a few lbs of brisket trim that I have cubed up for stew. It's off the fatty end but I trimmed off most of the excess. My plan is to putt it in a shallow pan with a grate and put it in the Traeger to cook slowly, then add it to the stew. Just wondering if anyone has tried that and how did it come out? Also my whole briskets usually take 11-12 hours and I'm wondering how long the cubes would take?
 
The length of cook will depend upon the size of the cubes as well as the temperature. You might want to put the cubes in a saute pan and brown the cubes before smoking them. Part of the flavor of meat comes from the Maillard reactionas the beef sears. in the pan.
