Brisket - First time

Good idea with the boiling water. Might be better to adjust the offset at high temp as opposed to 32*F.
I am still waiting on the controller that they are supposed to be sending me. I will set at boiling temp when the new controller arrives.

Ps, I have also ordered a thermapen, as others have suggested. Ink bird or Fireboard would be nice, but just not in the budget right now.
I just don’t have the confidence in the probe system
 
Well done on your first go. I couldn't cook without my Fireboard probes because it gives me accuracy first and also I don't have to open the lid so many times which is not good. The Thermapen is a great probe but as Slim said in its proper place. I don't even use a carving fork to move my meat because of the holes it makes. If Fireboard is not in your budget then get a cheaper version, as long as it has at least three probes, two for the meat and a ambient probe which is just as important.
