Beef short ribs

My daughter is wanting beef short ribs. I’ve never done this and can’t find a recipe that has a slow cook time. Has anyone ever done this?
 
Lots of recipes online for smoked short ribs. Some are on a pellet grill as well.
I do my short ribs similar to a brisket. Season, on the smoker at 200-225 until i get a good bark, around the stall. Usually that's 170°F internal temp for my preference. Then I wrap in foil (can use butcher paper, if you prefer). When adding to the foil, I will add a little liquid to it. Either basting with BBQ sauce or just water, beer. Something to add liquid to the braising process. Wrap up tightly and crank the temp of the pit up to 275-300, depending on how fast you need it done. You are looking for 'butter' tender consistency, which will be about 200-205. You can rest and eat as is, or remove from the foil and add some BBQ sauce to tack up on them.

I do pretty much as @RustyJake , but instead of wrap I pet it in a tin with beef broth and water, then cover it in foil til probe tender. I’ve done both ways and had great results.
