I like that upper shelf on that smoker.

i believe that was on the Mad Scientist Youtube channel, as well.

That shelf would certainly give you some more options! Let us know if you try it and what you think.
 
I have yet to do a brisket. I just got a pork butt, so I'm going to start with that. In the video they said that the heat at the top is more consistent and the pan of water is to even out the heat from the drip pan.
We'll see!

Not related to the topic but I noticed something on your grill that I use to get which is those white/gray stains. Turns out that it was the results of smoke leaks. It was able to fix that by using Lava Rock thermal gasket. I would recommend doing the same.

Nice. Where did you get that shelf? You now can do a brisket with a large water pan underneath. That water pan makes a huge difference when doing pork butts or briskets and you don't have to worry about your drip bucket overflowing either.
